*note: i adapted my version from this recipe.
Ingredients
2 cups whole wheat flour
2 tsp. baking soda
1 tsp. cinnamon
1 tbsp. pumpkin pie spice
2 egg whites
1/2 cup honey
2 tbsp. vegetable oil
1/4 cup almond milk
1/4 cup unsweetened apple sauce
1 1/2 cups canned pumpkin (i used libby's)
1 cup chopped walnuts (or pecans, peanuts, etc. whatever you prefer) - OPTIONAL! if you have a nut allergy just leave these out. they are delicious either way!
Directions
- preheat oven to 350 degrees.
- mix all ingredients in one large bowl using an electric mixer.
- pour batter into a greased/lined muffin tin (i used a 12-muffin tin with liners. if you don't have liners, just grease your pan first with a little olive oil spray). make sure to only fill 3/4 of the way.
- bake for 20-25 minutes.
- cool and enjoy!
*makes 18 muffins
Get your kiddo involved
depending on your child's age, he/she can help you with at least part of this recipe. when i made these i measured out the ingredients first and then let norah pour them into the big bowl. she did well pouring what i asked her to but after her "job" was finished she lost interest and ran off to play ;) an older child could help you mix or even spoon the batter into the cups. have fun!

DeleteI just made these because I was craving something pumpkin. They are delicious! I used golden raisins instead of nuts and I'm addicted. They don't even taste like a "clean" muffin. Glad I made these. Thanks!!!
